We pride ourselves in cooking our food in small batches to ensure there's consistent quality and great attention to each batch of all our dishes. We go to great lengths to enhance our dishes from roasting and grinding some of our spices to calrifying our own butter, the resulting bold flavors will captivate and satisfy your palate.
The bone
Every foodie knows that the key to getting intensely flavorful meats is to cook it on the bone. By cooking most of our meats on the bone, our dishes are able to sing with flavor and are encorporating all the goodness of the marrow and tendons.
Spices
We carefully layer earthy, sweet, smoky, bitter, warm, and peppery spices to elevate our food to new heights while still keeping it down to Earth. Our slow cooking methods allow these spices to truly shine.
